Making Rajas Tacos

🌶️ How about making Rajas Tacos? These are flavorful tacos filled with roasted poblano peppers, corn, and other delicious ingredients.

Here’s the recipe:

Ingredients:

  • 4 large poblano peppers (also called pasilla peppers)
  • 2 ears of corn (shucked, or substitute 2 cups frozen corn, mushrooms, or zucchini)
  • 1 tablespoon olive oil
  • 1 yellow onion (or large white onion, thinly sliced into rings)
  • 4 garlic cloves (roughly chopped)
  • 2 tablespoons jalapeño (finely chopped; adjust for desired spiciness)
  • 1 tablespoon fresh oregano (or 2 teaspoons dried oregano)
  • ½ teaspoon cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon pepper
  • ½ cup Mexican crema (or substitute Mexican sour cream, crème fraîche, or vegan sour cream)
  • 1 lime
  • Tortillas (for serving)

Instructions:

  1. Preheat your oven’s broiler.
  2. Place the poblano peppers on a baking sheet and broil, turning occasionally, until the skin is charred and blistered (about 10 minutes). Remove from the oven and let them cool.
  3. Once cooled, peel off the charred skin, remove the seeds, and slice the peppers into thin strips.
  4. In a skillet, heat the olive oil over medium heat. Add the sliced onion and chopped garlic. Sauté until the onion is softened and slightly caramelized.
  5. Add the sliced poblano peppers, corn, jalapeño, oregano, cumin, ground coriander, salt, and pepper. Cook for a few minutes until the flavors meld.
  6. Warm the tortillas (you can use corn or flour tortillas) in a dry skillet or microwave.
  7. Assemble the tacos: Spread a spoonful of Mexican crema on each tortilla, add the poblano-corn mixture, and squeeze fresh lime juice over the top.
  8. Serve your Rajas Tacos warm and enjoy the deliciousness! 🌮

What’s The History Behind Rajas Tacos?

Rajas Tacos have an interesting history! 🌮 These flavorful tacos originate from Mexico and are beloved for their simplicity and rich taste. Let me share some insights:

  • What Are Rajas Tacos?
    • The word “rajas” in Spanish means “strips,” and that’s precisely what these tacos are all about.
    • Traditionally, Rajas Tacos feature strips of roasted poblano peppers and onions.
    • You can also find variations with zucchini, zucchini blossoms, or mushrooms (especially during cooler months).
    • The filling is often made creamy with Mexican Crema (similar to sour cream) or cheese.
  • Our Discovery:
    • We stumbled upon Rajas Tacos at La Super Rica in Santa Barbara (a favorite spot of Julia Child).
    • But it was during a trip to San Miguel Allende that we fell in love with them at a local taco stand.
    • Despite dining at fancy restaurants, these humble tacos stole the show!
  • How to Make Rajas Tacos:
    1. Grill the Poblanos and Corn:
      • Grill whole corn cobs and poblano peppers until lightly charred and tender.
      • Steam the blistered poblanos in a bag, then peel, deseed, and slice them into strips.
      • Cut the kernels off the corn.
    2. Sauté the Onion and Flavorful Additions:
      • Sauté white or yellow onion in olive oil until caramelized.
      • Add garlic, jalapeño, and fresh oregano.
    3. Combine Everything:
      • Add the corn and poblanos to the skillet.
      • Season with salt, pepper, and spices.
      • Stir in Mexican crema (or a vegan alternative).
      • Squeeze in lime juice.
    4. Warm Tortillas:
      • Grill or warm your tortillas.
    5. Assemble:
      • Spread a little crema on each tortilla.
      • Fill with the rajas mixture.
      • Top with cilantro and more lime juice.

Enjoy these delightful Rajas Tacos—the perfect blend of simplicity and flavor! 🌶️👌 If you’d like more recipes, feel free to ask! 😊
