Ingredients:

Instructions:

  1. Prepare the Egg Sauce:
    • In a medium bowl, whisk together the eggs, egg yolks, miso paste, and grated Parmigiano-Reggiano until smooth. Set aside.
  2. Cook the Udon Noodles:
    • Bring a large pot of water to a boil. Cook the udon noodles for about 1 minute. Reserve 1/2 cup of the udon water and then drain the noodles.
  3. Cook the Bacon and Garlic:
    • In a large skillet over medium heat, cook the chopped bacon until crispy. Add the minced garlic and cook for another minute until fragrant.
  4. Combine Everything:
    • Reduce the heat to low. Add the cooked udon noodles to the skillet with the bacon and garlic. Pour in the reserved udon water and mix well.
    • Slowly add the egg sauce mixture, stirring continuously to prevent the eggs from scrambling. Continue to stir until the sauce becomes creamy and coats the noodles evenly.
  5. Season and Serve:
    • Season with salt and pepper to taste. Garnish with togarashi seasoning and sliced nori strips if desired.

Tips:

Togarashi Seasoning
  • Miso Paste: White miso is lighter and less pungent, making it a good choice for this dish. However, if you prefer a stronger miso flavor, you can use a darker miso.
  • Togarashi Seasoning: This Japanese spice blend adds a nice kick. If you don’t have it, you can substitute with Korean red chili flakes or cayenne pepper.
