Here’s a delicious smoked turkey recipe:

Ingredients:

  • 1 (12-14 pound) whole turkey
  • 1 cup smoked paprika rub (see below)
  • 1 cup wood chips (such as apple or cherry)
  • 1 cup turkey brine (optional)

Smoked Paprika Rub:

  • 1/2 cup smoked paprika
  • 1/4 cup brown sugar
  • 2 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon salt
  • 1 tablespoon black pepper

Instructions:

  1. Preheat smoker to 225-250°F.
  2. Prepare turkey brine (if using).
  3. Pat turkey dry with paper towels.
  4. Apply smoked paprika rub evenly over turkey.
  5. Place turkey in smoker, breast side up.
  6. Smoke for 4-5 hours or until internal temperature reaches 165°F.
  7. Baste with melted butter every hour.
  8. Let turkey rest 30 minutes before carving.

Turkey Brine (optional):

  • 1 gallon water
  • 1 cup kosher salt
  • 1/2 cup brown sugar
  • 2 tablespoons black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder

Brining Instructions:

  1. Combine brine ingredients in a pot.
  2. Bring to a boil, stirring until salt dissolves.
  3. Cool brine to room temperature.
  4. Submerge turkey in brine for 24 hours.

Wood Chip Options:

  • Apple wood chips: sweet, fruity flavor
  • Cherry wood chips: mild, slightly sweet flavor
  • Hickory wood chips: strong, smoky flavor

Tips and Variations:

  • Use a meat thermometer to ensure food safety.
  • Add aromatics like onions, carrots, and celery to the smoker.
  • Experiment with different wood chip flavors.
  • Try injecting marinades or mop sauces for added flavor.
