Step-by-Step Guide:

  3. Sear: Heat olive oil in an oven-safe skillet over high heat. Sear filets for 1-2 minutes per side, or until browned.
  4. Finish: Transfer skillet to preheated oven and cook for 8-12 minutes, or until filets reach desired level of doneness.
  5. Reduce: Remove skillet from oven and reduce heat to medium. Add cognac (if using) and beef broth to skillet, scraping up browned bits.
  6. Butter: Add butter to skillet and stir until melted.
  7. Serve: Serve filets with sauce spooned over top, garnished with parsley or thyme.

Rattlesnake Bites Recipe
Ingredients:

  • 1 lb jalapeño peppers
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
