Chicken Valdostana, an Italian dish originating from the Aosta Valley region. Here’s a step-by-step guide to this elegantly delicious recipe:

Ingredients

  1. 1 1/2 pounds boneless, skinless chicken breasts, cut into 4 pieces
  2. 1 medium onion, finely chopped
  3. 2 cloves garlic, minced
  4. 1 cup mushrooms (button or cremini), sliced
  5. 1 cup ham, diced
  6. 1 cup Valdostana cheese (or substitute with Fontina or Gruyère), shredded
  7. 1/4 cup all-purpose flour
  8. 2 tablespoons butter
  9. 2 tablespoons olive oil
  10. 1 cup dry white wine
  11. 1 cup chicken broth
  12. Salt and pepper, to taste
  13. Fresh parsley, chopped (optional)

Instructions

Preparation

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.

Sautéing

  1. In a large skillet, heat butter and olive oil over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for 1 minute.
  4. Add sliced mushrooms and cook until tender, about 3-4 minutes.
  5. Add diced ham and cook for 1 minute.

Assembling

  1. In a separate bowl, mix shredded Valdostana cheese and flour.
  2. Add cooked mushroom and ham mixture to the cheese mixture; stir to combine.
  3. Place a chicken piece in the skillet and top with the cheese and mushroom mixture.
  4. Repeat with remaining chicken pieces.

Cooking

  1. Add white wine and chicken broth to the skillet; bring to a simmer.
  2. Cover the skillet and transfer to the preheated oven.
  3. Bake for 25-30 minutes or until chicken is cooked through and sauce is bubbly.

Serving

  1. Remove from oven and let rest for 5 minutes.
  2. Serve hot, garnished with chopped fresh parsley if desired.
