Avocado Caprese Salad
Serves 4-6 as side | Time: 15 minutes
Ingredients
For the Salad
- 2 large heirloom tomatoes, red
- 2 large heirloom tomatoes, yellow/orange
- 2 ripe avocados, firm but yielding
- 250g mozzarella pearls or bocconcini, drained
- 1 cup fresh basil leaves, large ones torn
- 1 tsp flaky sea salt
- 1 tsp cracked black pepper
- 2 tbsp extra virgin olive oil, best quality

Method
