SEARED STEAK ON MASHED POTATOES WITH GLAZED CARROTS

Ingredients:

  • 2 steaks (sirloin/filet) 200g each
  • 3 potatoes, 2 tbsp butter, splash milk, salt
  • 2 carrots diced, 1 small onion sliced, 1 cherry tomato
  • Pan sauce: 1/2 cup beef stock, 1 tsp soy, parsley

Method:

  1. Mash: Boil potatoes, mash with butter, milk, salt.
  2. Carrots: Sauté carrots + onion 5-6 mins till glazed. Add splash stock.
  3. Steak: Season steak, sear 3-4 mins per side in hot pan. Rest 5 mins.
  4. Plate: Mash ring, steak on top, spoon carrots/onion + pan juices, add tomato + parsley.

GRILLED CHICKEN WITH CREAMY POLENTA & MUSHROOM GRAVY

Ingredients:

  • 2 chicken breasts
  • Marinade: salt, pepper, paprika, garlic, olive oil
  • 1 cup sliced mushrooms, 1 shallot, 1 cup stock, 1 tsp flour
  • Polenta: 1/2 cup cornmeal + 2 cups water/milk, 1 tbsp butter

Method:

  1. Polenta: Boil water, whisk in cornmeal, stir 10-12 mins till creamy. Add butter, salt, drizzle olive oil.
  2. Chicken: Season, grill/pan-sear 6-7 mins per side till golden 75°C.
  3. Mushroom gravy: Sauté mushrooms + shallot, add flour, then stock, simmer till thick.
  4. Plate: Swirl polenta, place chicken, spoon mushroom gravy around.

RAINBOW CARROT SESAME SLAW

Ingredients:

  • 3 carrots – orange, yellow, purple – spiralized / julienned
  • 1/2 cucumber, 1/2 red onion thin sliced
  • Handful cilantro / parsley chopped
  • Dressing: 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp sesame oil, 1 tsp sesame seeds

Method:

  1. Spiralize or thinly julienne carrots.
  2. Whisk dressing together.
  3. Toss carrots, onion, cucumber with dressing.
  4. Top with cilantro + sesame seeds, serve cold.
